Monsoon Spiced Vegetable Pakoras (crispy batter dumplings)

Warm monsoon rains with their sultry aftermath were always a reason to cook up these crispy vegetable chickpea batter pakoras (crispy dumplings). The true essence of summer rains and homely comfort when washed down with a cup of Cardamom milky tea or ‘chai’. You can use any vegetable you like! Even cheese works! 

Ingredients:

  • 100 grams chickpea flour / gram flour
  • 50 grams rice flour (not ground rice)
  • 1 teaspoon dry roasted cumin seeds
  • 1 teaspoon sea salt
  • 1/2 teaspoon red chilli powder / cayenne
  • Tap water to make the batter
  • Enough vegetable oil to fry the pakoras
  • slices of aubergines, halved
  • okra, sliced into 4 pieces horizontally
  • 1/2 a red onion, cut into thin rings
  • To garnish: 1 tsp finely chopped mint leaves 1 green chilli, sliced thinly 1 tsp chaat masala (optional, can be found in most South Asian shop, a tangy spice blend)

Method:

  • Whip up the batter ingredients into a thick batter by adding water slowly.
  • Heat vegetable oil in a frying pan (use as much as you like, I prefer to shallow fry). Keep the oil on medium heat.
  • Dip each slice of vegetable in the batter until coated evenly, dip into hot oil and fry either side until light brown.
  • Drain on kitchen paper and serve garnished with chopped mint leaves and sliced green chilli and chaat masala (You can also substitute chaat masala with a sprinkling of red chilli powder and ground cumin)

If you believe that rainy days should be spent at home with a cup of tea and a good book, we have good news for you! Forget your boring pakodas and fix your monsoon cravings by bonding over barbeque and grilling some caramelized potatoes to go with your chai.

Check out the recipe below:

Ingredients:

1 tsp chili sauce

1 tsp garlic paste

½ tsp ginger paste

1 tsp Worcestershire sauce

½ tsp mustard paste

2 tsp mix herbs

Black pepper to taste

Salt to taste

1 tbsp caramel flavoured syrup

6 nos baby potato, peeled and parboiled

5-6 satay sticks

Method:

Mix all the ingredients in a bowl and apply the mixture on the potatoes and keep aside for 30 mins. Arrange on the satay stick and grill with butter and serve hot.

Pakistan Navy continues rescue operation in rain affected areas of Sindh

Pakistan Navy continues its rescue and relief operation in the rain-affected areas of Sindh here on Saturday.

According to the spokesperson for Pakistan Navy, food packets and drinking water were distributed among 2500 people in Surjani Town, Hindu Goth and Korangi areas.

The rescue teams of Navy also distributed meal and basic necessity items in several Goths of interior Sindh.

Mobile medical teams of Pakistan Navy provided medical assistance to 300 people in Mirpur Mathelo and Sujawal.

At the request of the civil administration, Pakistan Navy diving teams also conducted search and rescue operations in Badin and Tando Bago.

More rain showers to hit Karachi today under seventh spell of Monsoon

Under the seventh spell of Monsoon, Karachi to receive more rain showers from today (Monday), predicted the Pakistan Meteorological Department (PMD).

A statement issued by the PMD said that seventh spell of monsoon rains entered Sindh on Sunday evening which could aggravate existing urban flooding in Lower Sindh.

Under the influence of this system rain and wind-thundershowers, with isolated heavy to light showers, are expected in Karachi, Hyderabad, Thatta, Badin, Shaheed Benazirabad, Dadu, Tharparker, Nagarparker, Mirpurkhas, Islam Kot, Umar Kot, Sanghar, Sukkur and Larkana.

Heavy to moderate showers are expected in parts of Karachi today, while the weather will remain cloudy.

On the other hand, PMD has advised all concerned authorities to remain alert during the forecast period.

The Met Office earlier issued a warning of urban flooding in Karachi. However, the chief meteorologist said that the system to effect Karachi is relatively ‘weak’ which may mean isolated light to heavy rains across the city.

The port city was devastated after receiving unprecedented rains since Thursday as many areas are still flooded with rainwater.
